Crunchy Mandarin Orange-Chicken Salad

Ingredients:

  • 1 packet Indomie Fried Noodles
  • 1 cup cooked chicken (shredded or diced)
  • 1/2 cup mandarin orange segments (fresh or canned)
  • 1/2 cup shredded cabbage
  • 1/4 cup sliced almonds (toasted)
  • 1/4 cup chopped green onions
  • 2 tbsp sesame seeds
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil

Cooking Instructions:

  1. Cook the Indomie Fried Noodles according to the package instructions, omitting the seasoning packet. Drain and let them cool.
  2. In a dry skillet over medium heat, toast the sliced almonds for 2-3 minutes until lightly golden. Remove from heat and set aside.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, honey, and sesame oil until well combined.
  4. In a large mixing bowl, combine the cooked and cooled noodles, shredded cabbage, mandarin orange segments, cooked chicken, green onions, toasted almonds, and sesame seeds.
  5. Pour the dressing over the salad and toss everything together until evenly coated.
  6. Plate the salad and serve immediately to enjoy the crunchy textures and sweet, tangy flavors.
